Instead of the current drop-down list to select a priority level, which takes two clicks to change, how about a row of five small colored priority level icons and corresponding radio buttons to select the level?
Don't know if it's possible to have radio buttons in the menu, but it would save a click, and also give a better overview of the available choices.

Do you mention about the context menu?
How about using Priority widget in the toolbar? And you can also change priority by clicking a priority icon in the thread pane.
